The Best Yogurt Parfait Ever

The other day I was channel flipping while my little man napped and as I passed by The Food Network the Pioneer Woman was on. I love her! I read her book about how her and her husband met, I browse her blog and I follow her on Facebook. I love how genuine and kind she is and I love how she is a city girl turned country. I just think she would be an amazing woman to meet and be friends with. Well needless to say, I stayed on that channel to see what she was cooking up. Her Menu was "The Best Ever" and it all looked delicious, but the one that stood out the most was The Best Yogurt Parfait Ever. My mouth was watering while watching her prepare this yummy treat. When my hubby and I went grocery shopping yesterday I made sure to grab the ingredients to try it out!
So today while we were driving home from the hair salon, Eli was saying that he was super hungry so I immediately decided to make the yogurt parfaits. Well Eli did NOT like that idea. He complained the entire ride home, then he complained while I was making it and then he complained until he put the first bite into his mouth! All he could say was YUM! These are really good! LOL I showed him! :)
So even though these aren't Pinterest inspired I still felt like they were good enough to share, and hopefully they will inspire someone else Pinterest surfing!

The Inspiration

Ingredients
One 17 1/2-ounce container plain Greek yogurt
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup brown sugar
Assorted berries (or other fruit of your choice)

Directions
First, pour the yogurt into a bowl. Then add the cream and vanilla. With a whisk, carefully stir until combined. It should be nice and thick.

Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least 20 to 30 minutes.

When you are ready to serve, place a small handful of berries (or other fruit) into a bowl or cup. Without stirring the mixture, spoon the yogurt over the berries. There will be creamy areas and brown sugar areas. Repeat the layers once, ending with berries on top.

Fabulous New Hair Cut

Ever since I have had my little one my hair has gone down the drain! I am constantly getting knots and tangles, my curl has pretty much been depleted, and its multi-colored! Basically I just needed a do over in the hair department. I had heard that your hair can change drastically with pregnancy but I guess I never expected it to change so much! Well today I got to treat myself to a nice hair cut and style. It was marvelous! So I went on Pinterest yesterday and picked out a few hair styles. I wanted to go SHORT but Eli asked that I keep it longer than my shoulders. We finally agreed on these two pictures.

Is not as spunky as the inspired one, but I love the way it turned out and how healthy it looks and feels! And my awesome hair dresser thinned it as well so hopefully no more knots and tangles!

Spinach, Strawberry and Raspberry Vi Shake

I have been drinking 2 Vi shakes a day for about a month and I feel great. I don't do the meal replacement for both of them because I am still nursing my son and I don't want to cut my calories drastically, but I do replace one meal and then drink the other one as a snack. I have had AWESOME results so far and I feel like they are gonna be even greater now that I have cut out junk food for my 21 day no junk food challenge.
Today I decided to try something different than my normal shake and on Pinterest I found a green smoothie recipe.

Spinach, Strawberry and Raspberry Vi-Shake: 8 oz. unsweetened Almond Milk 2 scoops Vi-Shape Shake Mix 1 cup Fresh Spinach 3-5 strawberries 1/4 cup raspberries 6 ice cubes Blend well!

My Turnout

It was pretty good but it was not my favorite. I think I will turn to the shake when I have some spinach and fruit that needs to be used before it goes bad as oppose to a daily shake option.

Claiming some bloglovin

Blackened Tilapia Tacos

We had absolutely NO FOOD in our fridge this morning when I got up because I have been putting off grocery shopping for a week or so. My hubby and I wanted to try and use up everything that we had in our freezer and pantry so we have had a lot of creative meals this past week. So this morning the LAST thing in our freezer that needed to be used (other than some venison) was a bag of tilapia. I am not a big fan of fish but since we had committed to using everything I decided to tackle my fish cooking phobia. As I was searching away on Pinterest an ad came on for the new Ruby Tuesday menu and BAM Blackened Tilapia stood out! My favorite recipe that I found was from the blog Sarcastic Cooking because it looked delicious and the ingredients were simple. The only thing that I changed was I topped my taco with sour cream and tomatoes.

Blackened Tilapia Tacos 
Ingredients (Serves 2-4)
½ Teaspoon Paprika
¼ Teaspoon Salt
¼ Teaspoon Pepper
¼ Teaspoon Cayenne Pepper
¼ Teaspoon Onion Powder
¼ Teaspoon Cumin
3 Tilapia Filets
1 ½ Tablespoons Olive Oil
1 Avocado
4 Whole Wheat Tacos
1Combine the dry seasonings in a small mixing bowl. Whisk to combine. Lightly dust each side of the tilapia filets with the seasoning blend.
2. Heat the olive oil in a large skillet over medium heat. Add the tilapia to the pan and cook the tilapia for five minutes on each side.
3. Warm the tortillas. Smash a little bit of avocado on each tortilla. Place a half of a tilapia filet on to each taco. Break the filet apart a little bit. Serve with a little bit of fresh pico de  gallo or salsa and some jalapeno slices.

21 day no junk food challenge!

I began a 21 day no junk food challenge. As great as I have been doing on my 90 day challenge with Body By Vi I have still been consuming a ton of junk! So when I saw this challenge on Pinterest I thought it would be the perfect thing to commit to, I mean come on, its only 21 days!
